If I try something like \u{i}, I get both the breve and the dot. How can I get it without the dot?

One has to load fontenc and specify the T3 encoding; if T1 is not desired, say \usepackage[T3,OT1]{fontenc} so as to get OT1 as the default encoding.
$\acute{\imath}$ is the right way. What do you mean by "not always works satisfactorily"?
In general, \imath and its companion \jmath should be used for the math accents:
\acute{\imath}\grave{\imath}\dot{\imath}(ambiguous!)\ddot{\imath}
and so on.

The dotless i is
\i; so you would want\u{\i}. (A dotless j is, likewise,\j).
