As of Dec 2020, it is possible to take the associate level exam from your home or office. This test will use online proctoring, so you will need a webcam and secure browser.
When registering for the exam, select the online proctored option.
You can schedule an appointment in a local exam center by going to the MathWorks Certfication Program page and clicking on the Register button. This page also contains a "Preparing for Your Exam" document outlining the concepts tested on the exam. The MATLAB Fundemantals course (in any format) covers these concepts and provides practice through the exercises. While individual mastery and comfort with the concepts may vary based on your prior experience, we recommend 100 hours of time in the product as a guideline before attempting the associate-level exam.
This is not at all what I'd call a trivial task, given the number of papers and stories on the MathWorks COVID-19 R&D page. At a quick glance the paper "Value of PET/CT and MATLAB in Detection of COVID-19 in an Oncology Patient - Case Report" from the American Journal of Internal Medicine might be relevant. Or maybe "Classification of Covid-19 Coronavirus, Pneumonia and Healthy Lungs in CT Scans Using Q-Deformed Entropy and Deep Learning Features" here?
