I am pretty sure this question was already asked but I cannot find it.
I am using ubuntu and would like to know where are the font files I am using when I compile a latex document?
I looked at them using my PDF reader (okular) but it does not tell me where the original file is and moreover, the name are strange, for example: WMZQAI+CMR12.
I would like to use these fonts in gnuplot without downloading anything and just use the ones that are on my computer.

Even if everyone had certain fonts installed, that wouldn't mean they had them installed for use with LaTeX. The ones in the catalogue are really the only ones typically set up for regular LaTeX support.
Or are you distributing XeLaTeX documents which use system fonts? If so, you might be interested in the empirical data here on which fonts are typically installed on which platforms: Here. Take these with a grain of salt. I personally run linux and use only free fonts if I can help it, and hence I do not have Times or Helvetica or Arial or Courier or anything like that installed. (I do have some free clones like Nimbus Roman/Nimbus Sans and the TeX Gyre fonts installed, however.)
If instead, you're looking for regular LaTeX fonts, and are asking which of the fonts listed in the catalogue does nearly everyone have installed, while I agree that only Computer Modern is guaranteed, I think just about everyone is going to have the standard PostScript fonts installed. These are the ones listed in psnfss2e.pdf.
I had a similar problem, and I solved it as follows. Note that I use a Mac, so the directories and commands are appropriate for Unix-like machines.
Suppose that the document you wish to use in a vector graphics program is called test.pdf and located in /Users/me/Desktop/. Enter the following commands into the terminal:
cd /Users/me/Desktop
gs -sDEVICE=pswrite -dNOCACHE -sOutputFile=test-out.ps -q -dbatch -dNOPAUSE test.pdf -c quit
You will get a file called test-out.ps on the Desktop that has all the letters and symbols in test.pdf traced out with vectors. This approach uses ghostscript, a nice little tool on Unix and Unix-like machines. I found this script somewhere on the internet, and I wish I could give credit for it, but I can't remember which forum I found it on.
This works fine if you want to use a few symbols and words to manipulate, but (I think) definitely not if you want to use the fonts to type text.

For LaTeX all of your fonts (*.pfb, *.map, ...) are in
$TEXMF/fontsor$TEXMFLOCAL/fontsor in$TEXMFHOME/fonts. The style and fd (font definition) files are always under$TEXMF/tex/latex/For Xe(La)TeX and Lua(La)TeX also in the systems font directories:
/usr/share/fonts,/usr/local/share/fonts/and~/.fonts/. However, for Xe(La)TeX you have to modify the search path for fontconfig. Otherwise the fonts in the TeX-distribution are not found. Lua(La)TeX has its own font search handling.
