See the "About" sectIon on the right hand side of Steve's blog. http://blogs.mathworks.com/steve/ He literallywrote the book on image processing with MATLAB.
The following page shows a list of more than 900 MATLAB and Simulink based books:

There are sections for a lot of different areas of interest and there also is a section for non-English books, where you can find books in more than 20 different languages.
Pretty much you can read it in one weekend and gives you a good kick-start.
It is written by mathworks. It is free. Don't let the number of pages scare you. The spacing between the lines is a lot and there are a lot of figures and white spaces. So despit having 198 pages, you can read it in one weekend. (well that's what I did the first time I started using MATLAB and next week I had a meeting with my adviser all my plots and analysis was done in MATLAB; So, I really mean it, it is possible to get a good start using MATLAB starting with "MATLAB Primer").
