MATLAB: Two channels of a music

speech processing

    I am new to speech processing. When I saved the audio 'handel' in a variable 'y' I got only one channel. But when I did the same to some  other music file in my computer I got two channels. What are these two channels?
If there is any tutorial about speech processing using matlab you can direct me there.

Two channels are usually left and right ears of stereo.
