At university I used a pic18f8722 and it provided me with a good introduction. It's ideal for embedded systems and you can use the MPLAB® X integrated development environment for programming. Strongly recommend getting/building a suitable I/O board.
Michael, are you referring to theMATLAB and Simulink Support Packages for Arduino ? If so, yes the MATLAB and Simulink Student Suite will do the trick. The Support Packages are complimentary, there are no additional costs on top of the student license.
