If you are asking for shape functions of FEM, then there are two option 'linear' and 'quadratic', check the documentation page of generateMesh function.

None, unless you write it yourself. You could always try the file exchange, maybe someone has done this before. Matlab's triangulation is based onqHull. If you want other types of triangulations, I think you should look outside Matlab, for instanceCGAL. CGAL has a very steep learning curve, and requires you to know C++. On the other hand, it can use exact arithmetic so numerical stability is less of a problem.
