I didn't read all 131 pages, but my guess is that the answer to your question would be "Yes".

For example,

   L=load('emnist-letters.mat');
z=reshape( L.dataset.test.images.' ,28,28,[]);
imshow(z(:,:,100))

str = char(tcpdata)

will convert the ascii code to a string. str(8:15) will give you the date. str(17:24) will give you the time.
