I cannot view previous frames of the Vector Scope plot in the Signal Processing Blockset after the simulation is done, only the last one is displayed.

The ability to view previous frames of the Vector Scope plot is not available in the Signal Processing Blockset.
To work around this issue, you can output the data to the workspace using the To Workspace block, and generate the previous plots in MATLAB.
You can also check the "Persistence" box under the Display Properties tab of the Vector Scope mask to overlay successive input frames in the scope display.
You can also use the Waterfall block in the Signal Processing Blockset.
