I am trying to plot temperature versus time (both vectors) over an entire month, and have data points every ten minutes. When I do this, it puts all data points that have the same time along the same axis. I'd like to know how to lay out the x-axis so that I have all points spread out and in chronological order.

Typically one would perform an Analysis of Variance ( anova1) on the actual dataset, not on your summary statistics. This will test the null hypothesis of equal mean returns vs. the alternative that at least one day's mean return is different. If you want a pairwise comparisson you can then pass the stats output to the multcompare function.

You can adjust tick marks and format as desired; somewhat of a problem as the labels take up quite a lot of room but as demonstrated, the x-axis is plotted in date number range of floating point values and then transformed to display time by datetick
With the introduction of the new date/time data type, there's an overloaded plot function that handles that class of time inputs natively; I don't have the release so check the doc's...works generally the same way as the new class is also fundamentally a date number with just more resolution and builtin methods.
