MATLAB: How to bind a specific value to a color using colormap

I'm plotting a 2D contour plot using contourf(X, Y, Z). How can I create a custom colormap, where certain color would be bound to a curtain value? For example:

100 – [1 0 0]

200 – [1 0.5 0]

1000 – [1 1 0]

It would be also nice to make all values below 100, for example, [0.5 0 0] and all values above 1000 – [1 1 0.5].

Please, do not suggest colormap editor. If this task is impossible for colormap, suggest me another function for 2D plots (maybe, plot it dot by dot)

See the tip section of caxis for an explanation of how matlab maps the Z values to a colour map index. So:

   mapbounds = caxis;
   numcolours = size(colors_interp, 1);
   mapindex = fix((Z-mapbounds(1)) / (mapbounds(2) - mapbounds(1)) * numcolours) + 1;
   mapindex(mapindex < 1) = 1;
   mapindex(mapindex > numcolours) = numcolours;
   img = ind2rgb(mapindex, colors_interp);
   imshow(img);

T = interp1([1:3]', T, linspace(1, 3, 5)');
m = 161;
map = zeros(m , 3);
x = [0
     50

map = interp1(x/255,T,linspace(0,1,255));
I = linspace(0,1,255);
imagesc(I(ones(1,10),:)')
colormap(map)
