When I import the dxf file it has no height data. Not sure where I'm going wrong as all the layers have height data when checked in QGIS.
It seems I loose it when exporting as a dxf.
This question may indicate that dxf has no height values but is drawn to height. Not sure.
You don't need to convert your layer in 3D layer to make interpolations, you only need the z attribute.
You can choose between working with the contour lines or with points:
You can create points along input lines with GRASS GIS or SAGA GIS in the Processing Toolbox or with PyQGIS in the Python console.
And you can use
3D raster in GRASS GIS nviz
When you generate the contours in QGIS, make sure that you tick the Attribute name box. Then when you ogr2ogr (you must use command line - this is not an option in QGIS Save AS), specify the zfield. For example, if your elevation attribute is "ELEV", then your command could look something this:
ogr2ogr -f "DXF" contours-out.dxf contours.shp -zfield ELEV
By the way, if you were searching for this in answers, you would not have found it. I learned this method from this question.
EDIT: I should also point out that the DXF will not have an attribute field for elevation, but instead will be drawn to elevation.

Try using the
Set Z valuetool inProcessing Toolbox > Vector geomoetryinstead of Grass.Use the icon to the right of the Z Value input and click Edit to add an expression. For the expression just write
"ELEV".Then when you are exporting the layer to DXF make sure the
Include z-dimensionbox is checked, if it isn't then set theGeometry typeto LineString and then check the box.
